Maille Falafel Salad

Ingredients
- 1/2 shredded red cabbage
- 8 ready-made falafel
- 1/2 cup mint leaves
- 2 fresh beetroots
For the vinaigrette
- 1/2 cup extra virgin olive oil
- juice of 1 lemon
- 1 tablespoon Maille Dijon Mustard with Honey
Preparation
- Cut the beetroots in quarters and place on a baking tray together with the falafels, drizzle with oil and cook in a preheated oven at 180 degrees C. for 15 minutes
- Add the cabbage in a shallow bowl
- Mix the olive oil, lemon and mustard to form a vinaigrette
- Evenly place the falafel, beetroot and mint leaves on the cabbage and drizzle with the vinaigrette.
