Maille Falafel Salad

  • 1/2 shredded red cabbage
  • 8 ready-made falafel
  • 1/2 cup mint leaves
  • 2 fresh beetroots

For the vinaigrette

  1. Cut the beetroots in quarters and place on a baking tray together with the falafels, drizzle with oil and cook in a preheated oven at 180 degrees C. for 15 minutes
  2. Add the cabbage in a shallow bowl
  3. Mix the olive oil, lemon and mustard to form a vinaigrette
  4. Evenly place the falafel, beetroot and mint leaves on the cabbage and drizzle with the vinaigrette.
