Roasted New Potatoes
- 2 Tbsp. Maille® Old Style Mustard
- 2 Tbsp. olive oil
- 1 1/4 lbs. red new potatoes, quartered
- 1 cup roughly chopped shallots
- 1 Tbsp. chopped parsley
- 1 tsp. fresh thyme
Preheat oven to 400°.
Combine Maille® Old Style Mustard with olive oil in large bowl. Add potatoes and shallots; toss. Arrange in 13 x 9-in. baking dish. Bake until potatoes are tender and slightly brown, about 1 hour . Sprinkle with parsley and thyme. Season, if desired, with salt and ground black pepper.
