Salmon on Avocado Toast

  • 1 lb. smoked salmon
  • 3 tbsp. of Maille® Rich Country mustard
  • 2 tbsp. finely chopped cornichons
  • 1½ tsp. chopped fresh tarragon leaves
  • 2 avocados
  • 4 slices whole grain bread, toasted


  1. Mix Maille® Rich Country mustard, cornichons and tarragon in bowl; cover and refrigerate 30 minutes.
  2. Peel, pit and mash avocados in bowl, stir in remaining mustard.
  3. Spread toast with mashed avocado, then top with smoked salmon. Season, if desired, with salt and pepper.
