Salmon on Avocado Toast

Ingredients
- 1 lb. smoked salmon
- 3 tbsp. of Maille® Rich Country mustard
- 2 tbsp. finely chopped cornichons
- 1½ tsp. chopped fresh tarragon leaves
- 2 avocados
- 4 slices whole grain bread, toasted
Preparation
- Mix Maille® Rich Country mustard, cornichons and tarragon in bowl; cover and refrigerate 30 minutes.
- Peel, pit and mash avocados in bowl, stir in remaining mustard.
- Spread toast with mashed avocado, then top with smoked salmon. Season, if desired, with salt and pepper.
