Zoodles with Horseradish Mustard

Ingredients
- 1¼ lbs. Zucchini “noodles” or yellow squash noodles
- ¼ cup Maille® Horseradish Mustard or Maille® Honey Dijon Mustard
- 1 tbsp. olive oil
- 1 tsp. lemon juice
- ½ tsp. Chopped fresh thyme
Preparation
- Pat zucchini “noodles” with paper towels to absorb excess moisture.
- Mix Maille® Horseradish Mustard and olive oil in large nonstick skillet and bring to a simmer over medium-high heat. Add zucchini “noodles” and cook, stirring, until heated through, about 1 minute. Stir in lemon juice and thyme.
- Sprinkle, if desired, with chopped chives and season, if desired, with salt and pepper.
