Breakfast Potatoes With Faux Hollandaise Sauce

Ingredients
For the Hollandaise sauce:
- 1/2 cup plain Greek yogurt
- 1/2 cup mayonnaise
- 2 tsp Worcestershire sauce
- Juice of half a lemon
- 3 tsp Maille Traditional Dijon Originale Mustard
For the potatoes:
- 2 pounds of mini potatoes
- 2 tablespoons olive oil
- Salt and pepper
- Fresh thyme or rosemary.
Preparation
For the Hollandaise sauce:
- In a small bowl, stir together all ingredients until well combined. That’s it!
For the potatoes:
- Preheat oven to 425 degrees.
- Spread 2 pounds of mini potatoes on a baking sheet.
- Drizzle with 2 tablespoons olive oil, sprinkle with salt and pepper and a few sprigs of fresh thyme or rosemary.
- Bake for 30-35 minutes, or until the potatoes are golden brown. Serve drizzled with faux hollandaise sauce (they taste especially delicious with the herb version).
